Cream together:
3/4 cup butter
1/2 cup which sugar
1/2 cup brown sugar
3 eggs
Add:
1 tsp. vanilla (the real kind, not imitation)
2/3 cup juice (we just use whatever we have around at the time!)
Mix and add to previous mixture:
2 3/4 cup flour (I use Prairie Gold Wheat Montana flour - it is "light" wheat)
2 tsp. baking soda
1/2 tsp salt
2 tsp. cinnamon
1/2 tsp. nutmeg
little bit of ginger
3 1/2 cups oats (or whatever looks right in the mix!)
Add in:
a chopped apple
1/2 cup raisins
1/2 cup craisins
3 large handfuls of chocolate chips (or whatever you like...)
1/2 cups chopped nuts (we usually use walnuts)
Bake at 350 degrees about 10 minutes - don't over cook!

ReplyDeleteLOVE these cookies! Made my first batch last week, substituting the white sugar for molasses. Makes for a much darker cookie, but I love the extra flavour.
ReplyDeleteI made another batch this morning, subbing some Kamut flakes for about a cup of oats, and adding a handful of ground flax, chia seeds, hulled hemp seed and oat bran to the batter. So its totally okay that I just ate six, right?
